Sweet Potato Casserole
Serves 8

3 cups mashed sweet potatoes (canned works fine)
3/4 cups sugar
1 tbsp vanilla
2 eggs beaten
1/4 lb. butter

Mix ingredients together and put into a greased casserole dish.


Topping:
1 cup packed brown sugar
1/3 cup flour
1/3 cup melted butter
1 cup chopped pecans

Mix ingredients together and crumble over the top of the sweet potato casserole. Bake casserole at 350 degrees for 30 minutes.
