Coffee Cured Filet
4 Beef Tenderloin Filets
2 1/2 Cups Strong Espresso Coffee
1 Tbsp Brown Sugar
1/4 Cup Molasses (Regular Strength)
1/4 Cup Olive Oil
3 Tbsp Kosher Salt (or Sea Salt)
1 Tsp Cumin
1/2 Cup Ice
Add 1/2 Tsp Crushed Red Pepper
Place all the liquid and dry ingredients into a large bowl and mix until dissolved.
Add ice to cool the mixture. Add the filets and marinate at least 6 hours.
